Coffee and Cake

After each gardening session the MeGA volunteers enjoy a coffee or tea together with a slice of much anticipated cake or homemade biscuits made by one of the team. It’s a lovely opportunity to see the whole group and to have a catch up. There have been many recipes shared following these get togethers and it has been suggested that they might be put on the website for all to share.


This week it is Matilda Cake, a recipe handed down by a volunteer's granny.


6oz butter

2 tablespoons of golden syrup

4oz sugar

4oz sultanas

4oz glacé cherries chopped

10oz S.R flour


Melt the butter, syrup and sugar. Add the fruit. Fold in the flour.

Spread on a lined square baking tray or Swiss roll tin.

Bake at 160C for 20-30 minutes.
